In the high-end industrial baking sector, the production of doughs subjected to freezing, long fermentation processes, or high levels of added fats and sugars requires the use of high-strength flours with a highly resilient gluten structure. Harinas Polo’s Florencia Extra Wheat Flour is specifically designed to meet these rigorous demands, produced by milling whole wheat grain (Triticum aestivum) that is mature, sound, dry, and industrially clean.

In terms of formulation, this product incorporates E-300 (ascorbic acid), which acts as an oxidizing agent to enhance gas retention, stabilize tolerance to intensive mechanical kneading, and boost the natural tenacity of the protein network during automated plant processes.

    Physical Transformation and Technological Properties.

Extra-Strong Bread Flour: Features an exceptionally high W410–440 rating, making it ideal for supporting the weight of enriched ingredients and withstanding the mechanical stress of the most demanding production lines.

Balanced Alveograph Ratio ($P/L$): Features a P/L ratio of 1.00 – 1.10. By positioning itself almost symmetrically around unity, it indicates a dough with robust tenacity yet sufficient extensibility—a balance necessary to prevent tearing under high inflation pressure.

Controlled Enzymatic Activity (Falling Number): The Hagberg Falling Number value is 330" data-index-in-node="92">>330 seconds. It ensures very low alpha-amylase activity, protecting starches against premature degradation and guaranteeing stable doughs that do not become sticky in dosing hoppers.

High Performance Protein Profile: Presents values of protein 13.0\%" data-index-in-node="66">>13.0% (with a declared mean of 13.4 g for every 100g in your composition analysis), one wet gluten 32.0\%" data-index-in-node="172">>32.0% and a dry gluten 10\%" data-index-in-node="197">>10%.

    Main Industrial Applications.

Florencia Extra Wheat Flour is classified as an intermediate product for human consumption that is not intended for the final consumer, requiring prior industrial transformation before its use in the production of baking or other baked products.

    1. Enriched Doughs and Premium Breadmaking (Panettones, Brioches, and Roscas):

    • Dosage: Flexible; can be used as the primary flour base (100% of the formulation) or to strengthen weaker flours.

    • Effect: Thanks to its high wet gluten content (32.0\%" data-index-in-node="53">>32.0%) and the strengthening action of E-300, this flour is capable of absorbing and binding large quantities of butter, eggs, and sugar without the dough "breaking" or collapsing. The industrial result is products with high volume, a silky crumb structure, and lasting crumb elasticity.

    2. Baking Processes with Freezing Lines and Long Fermentation:

    • Effect: In bread doughs subjected to rapid-freezing tunnels for subsequent distribution, ice crystals tend to mechanically tear the weak gluten. The high W(410 – 440) of Florencia Extra provides a robust structure that withstands prolonged freezing and delayed fermentation processes exceeding 24–48 hours, preserving the dough's oven-spring potential in deck or tunnel ovens.

Although a protein content of 13.4 g ensures a substantial amount of gluten, the proteins themselves can exhibit excessively extensible or soft behavior depending on the wheat variety. During industrial mixing, E-300 acts as an oxidizing agent that catalyzes the formation of disulfide bonds between the proteins. This imparts rigidity and tenacity to the dough, raising the final strength value to the 410–440 range and ensuring the structure can support the weight of heavy fats or withstand long fermentation times without collapsing.

The upper physicochemical limit set at <0.75% serves as the maximum tolerance threshold for the quality department. However, the fact that the actual average value consistently stands at 0.55 g indicates a flour with an optimal degree of refinement and high purity. By almost completely removing the grain's peripheral bran, abrasive wear on the plant's injection or extrusion nozzles is drastically reduced, ensuring that the final products achieve a very clean and aesthetically pleasing white/cream crumb color.

An alveograph ratio of 1.00–1.10 represents a virtually perfect balance between dough tenacity (P) and extensibility (L). On high-speed industrial rounding or forming lines, if the P/L ratio were too low, the dough would spread and lose its shape; if it were too high, the dough would become so elastic that it would shrink and break the molds. This precise balance ensures that the dough flows smoothly along the conveyor belts, maintains a symmetrical geometric shape, and expands uniformly inside the oven.
