Superior Nutrition and Health Benefits.
whole wheat flour is consolidated as one of the fundamental pillars of conscious nutrition and healthy eating. Unlike white flour, this ingredient is obtained by grinding the whole wheat grain, preserving its three anatomical parts intact: the bran (outer layer rich in fiber), the germ (embryonic nucleus, source of antioxidants and fatty acids) and the endosperm (central body loaded with starch and proteins).
Preserving the integrity of the grain ensures a food of high nutritional density that is essential for balanced diets, functional baking, and the prevention of metabolic diseases.

Health Benefits and Advantages.
Optimization of intestinal transit: Its high concentration of insoluble dietary fiber (primarily from bran) increases fecal bulk and accelerates transit, actively preventing constipation and protecting colon health.
Glycemic Index Control (Sustained Energy): The complex carbohydrates in whole-grain flour are digested and absorbed gradually. This prevents drastic spikes in blood glucose and insulin, making it an excellent ally for people with type 2 diabetes or insulin resistance.
Cardioprotection and cholesterol reduction: Various epidemiological studies show that the phytosterols and soluble fiber found in whole grains help lower LDL cholesterol levels ("bad cholesterol") and blood pressure.
Satiating effect and weight control: By slowing gastric emptying, it significantly prolongs the feeling of fullness, thereby reducing total daily caloric intake and supporting obesity treatments.
Source of essential micronutrients: It is a natural source of B-complex vitamins (B1, B3, B5), vitamin E (a powerful antioxidant), and critical minerals such as magnesium, iron, zinc, and phosphorus.

Technical Data Sheet: Whole Wheat Flour
(Note: The downward adjustment accounts for the physical barrier effect of the whole-grain fiber matrix, which reduces the accessibility of amylases and lowers the absorption rate of complex carbohydrates.)
Technical note: Flour White Wheat (Sifted)
(Note: The adjustment is significantly lower due to the mechanical removal of the bran and germ. With the pure endosperm exposed, starches are digested very rapidly, and intestinal absorption efficiency is nearly complete.)
The main difference lies in the milling process and the grain components that are retained. While white flour is produced by extracting only the endosperm (rich in starch and protein), our whole wheat flour is obtained by milling the entire grain. This means it retains the bran (which provides insoluble dietary fiber) and the germ (a source of essential fatty acids, B-complex vitamins, and antioxidants) intact, offering significantly higher nutritional density and a more rustic, authentic flavor.
Due to the high content of bran and fiber particles, whole-wheat flour has a much higher water absorption capacity than refined flour. Generally, whole-wheat doughs require 5% to 10% more hydration to achieve the same consistency. Additionally, it is advisable to use slightly longer autolysis times (letting the flour and water rest before kneading) to allow the bran particles to hydrate fully and avoid disrupting the gluten network during the kneading process.
Because it retains the wheat germ, whole wheat flour contains natural oils that make it more susceptible to oxidation than white flour. Its optimal shelf life is approximately 6 months from the time of milling. To ensure freshness and optimal performance, it should be stored in a cool, dry place (relative humidity below 65%) away from direct light. During periods of high summer temperatures, it is recommended to keep the sacks in well-ventilated areas to prevent the fatty acids from going rancid prematurely.
