Harinas Polo Toasted Buckwheat Groats: Roasted notes and nutty aromas.
Harinas Polo’s Toasted Buckwheat is a high-purity industrial raw material obtained from hulled buckwheat seeds (Fagopyrum esculentum) that have undergone a thermal roasting process in Spain.
In terms of organoleptic properties, it is distinguished by a characteristic, uniform brown color (though slight variations in shade or degree of roasting may be perceptible between batches) and an intensely expressive, characteristic roasted aroma and flavor profile, free from off-notes or strange aftertastes.
1. Batters and Fine Pastry (Sponge Cakes, Cupcakes, and Muffins):
Applications in the Food Industry:
Rustic Bakery and Roasted Specialties: Delivers an intense aromatic profile reminiscent of toasted nuts, hazelnuts, or caramelized crust, while also imparting an attractive brown hue to the crumb.
Exterior Coating (Crunchy Topping): Applied to the crust of sourdough breads, loaves, or buns to provide an intense, crunchy bite, thanks to its extremely low moisture content (2.80%).
Cookies, Cereal Bars, and Granola: Ready-to-use ingredient for dry mixes or cookie production, requiring no pre-toasting in the workshop.
Technical Dosing Guidelines:
Use as an Inclusion or Topping: No recommended minimum or maximum percentage (generally between 3% and 15%, depending on the desired intensity of the roasted aroma).

| ENERGY VALUE | 390 Kcal / 1652 KJ | High caloric density due to its low residual water content. |
Industrial roasting dehydrates the kernel to a moisture level of 2.80% and triggers controlled Maillard reactions that enhance roasted nut aromas. This eliminates the need for a thermal process in the workshop, standardizes color and aroma across batches, and allows for direct inclusion or use as a topping while maintaining superior crunchiness.
