Texture and Comprehensive Nutrition for the Industry.
At Harinas Polo—specialists in cereals since 1880—we offer our high-quality steel-cut oats. Unlike traditional rolled oats, this product is obtained by cutting the whole grain (groat) into small sections using steel blades, without subjecting it to steaming or heavy flattening processes. The result is a robust ingredient with a distinctive texture and the full integrity of the original grain.
What does steel-cut oats offer?
Steel-cut oats represent the perfect balance between whole grain and finely processed grain. Because they have less exposed surface area than rolled oats, they better retain their natural oils and offer a lower glycemic index, making them a preferred ingredient for products focused on metabolic health and slow-release energy management.
Uses in the Baking and Pastry Industry:
Harinas Polo’s Steel-Cut Oats are the ideal tool for bakers looking to add value and visual distinction to their creations:
Topping and Decoration:Adds a rustic, golden appearance to the crusts of sourdough breads and whole-grain loaves.
Multigrain Doughs: Upon hydration within the dough, it provides pockets of soft yet firm texture that enrich the consumer's sensory experience.
Rustic-Style Biscuits: Ideal for "digestive" or artisanal-style biscuits, where the goal is to highlight the natural origin of the grain.
Healthy Baking: Partial substitute for chopped nuts, offering similar nutritional benefits at an optimized cost.
Uses and Applications in Various Industrial Fields.
Thanks to its stability and morphology, Harinas Polo’s cut oats are in demand across various sectors:
Industrial Quality Specifications:
Particle size: Uniform cut to ensure consistent hydration times.
Cleanliness: Absence of impurities achieved through state-of-the-art optical sorting systems.

Breakfast Cereal Industry:
A base for premium mueslis and "crunchy" granolas, designed for a firmer, artisanal bite.
Ready-to-Eat Meals Sector:
Excellent as a substitute for rice or quinoa in commercial salads, healthy bowls, and side dishes, thanks to the fact that it holds its shape after cooking.
Energy Bar Industry:
It provides mechanical structure and a chewy texture that sets the product apart on the sports nutrition shelf.
Plant-Based Meat Products:
Used as a texturizing agent in plant-based burgers and sausages to naturally simulate the bite of animal protein.
Quality Harinas Polo: Tradition in Every Grain
The main difference lies in the groat processing method:
Traditional flakes: These are made by passing the whole grain through rollers that flatten and steam-precook it.
Steel-cut oats: The clean, whole grain is mechanically cut into small pieces using steel blades, without undergoing flattening or pre-cooking processes. Because they are not heat-processed, they retain the grain's original structure intact, offering a much denser texture, a more robust nutty flavor, and slower digestion (lower glycemic index).
Since the grain retains its natural hardness, a preliminary soaking or scalding treatment is recommended for successfully incorporating it into the bakery production process:
The process: Ideally, soak the chopped grains in water (in cold water for a few hours, or in boiling water for 20–30 minutes) before adding them to the mixer.
Benefit to the dough: This soaking softens the grain's core just enough to make it pleasant to bite into, preventing it from absorbing water from the dough itself during baking.
The result: A loaf with a spectacular crumb, speckled with small, crunchy bits that provide a unique, high-end bakery-style textural contrast.
Steel-cut oats are the quintessential differentiating ingredient for brands looking to compete in the gourmet or healthy food segment:
In granolas: It provides a much longer-lasting crunch and a rustic, irregular appearance that evokes a 100% handmade product.
In porridge: As they cook, the chopped grains absorb the liquid but retain their consistency, resulting in a much heartier, chewier breakfast with a creamy—but not pasty—texture.
Appealing to the modern consumer: It meets the current market trend seeking "less processed" foods that are closer to their natural state as found in the field.
