Polo Poppy Seed: Visual Elegance and Gourmet Texture.
In the gourmet bread and pastry sector, the use of small oilseeds is an established strategy for imparting complex flavor profiles, adding crunchy textures, and enhancing the visual appeal of crusts. Harinas Polo’s poppy seed is a high-quality, selected natural ingredient. Legally defined as an intermediate product, it is intended for human consumption but not for the end consumer; it requires prior processing or technological transformation before being used in doughs and baked goods.
Its application on production lines is highly versatile; it is recommended both for direct inclusion in the dough and for surface use as a coating or topping. As a pure agricultural product, it exhibits a characteristic blue-black to blue-gray color, with a typical aroma and flavor.
Physicochemical parameters, structural purity, and sanitary control.
Botanical Purity Guarantee: The product ensures an index of purity >99.98%, confining impurities of plant origin to an insignificant residual margin of the <0.02%.
Moisture Control: Establishes a technical maximum limit of <10.0% , with an average actual analytical value of 5.90 g per 100 g of product. This low level of free water is crucial for preventing caking in the dosing silos.
Mineral Potential (Ash): Sets a regulatory maximum limit of <7.0% , showing an actual analytical average of 6.40 g per 100 g due to the dense native mineral package of the seed.
Strategic Features and Functionalities:
Aesthetic Impact and Differentiation: Its small size and dark color provide an elegant visual contrast against both the crust and the open crumb structure.
Lasting Crunch: Unlike other seeds that can soften due to moisture, poppy seeds retain their crunchy texture even days after baking.
Subtle Aroma Profile: When exposed to oven heat, it releases mild, nutty notes reminiscent of nutmeg and pine nuts, enriching the bread's bouquet.
Rich in Calcium and Fatty Acids: It is one of the most concentrated plant-based sources of calcium and provides essential unsaturated fats, enhancing the product's heart-healthy profile.
Applications in the Sector:
Artisan Bakery: Classic Vienna bread, premium loaf breads, bagels, and rustic multigrain loaves.
Pastry and Baking: A star ingredient in lemon muffins, fillings for Central European cakes (such as Strudel), and butter cookies.
Industrial Use: Perfect for toppings on par-baked breads and healthy snacks, thanks to its high adhesion when used with steam or glazes.

Poppy seeds are extracted from the pod of the Papaver somniferum plant, which naturally secretes a latex rich in opioid alkaloids (such as morphine and codeine). Although the seeds themselves do not contain these alkaloids, they can become superficially contaminated during mechanical harvesting through contact with the plant's fluids. Strictly controlling the Morphine Equivalent (calculated as morphine content + 0.2 x codeine content) to below <20 ppm complies with a strict European Union food safety guideline. This ensures that subsequent industrial processing eliminates any trace of analgesic or narcotic activity, guaranteeing that the final bread product is completely safe and suitable for unrestricted public consumption.
When poppy seeds are used as a concentrated topping on the surface of bread or brioche, they are exposed to direct heat transfer from the oven air (which can range from 200°C to 240°C). Due to their very low simple sugar content (3.0 g per 100 g), the topping withstands prolonged baking without undergoing an accelerated Maillard reaction, preventing the seeds from becoming charred or developing bitter flavor notes. At the same time, their high vegetable fat content (41.60 g) acts as a thermal and hygroscopic shield: the oils undergo a controlled technical toasting process that seals in the moisture of the underlying dough, giving the crust an intensely crisp texture and a glossy finish with high visual appeal.
