Harinas Polo Fine Wheat Semolina: High-Purity Granular Structure for the Food Industry.

In the industrial food sector, geometric consistency, macromolecular purity, and color stability are the critical variables defining the quality of an intermediate ingredient. Harinas Polo’s Fine Wheat Semolina rigorously meets these technical requirements. It is a granular product composed exclusively of the endosperm obtained from milling selected, sound, clean, and mature durum wheat grains (Triticum durum).

With a 100% pure composition free from artificial additives, this fine semolina offers excellent translucency, a natural yellowish hue, and properties ideal for automated processes requiring gradual hydration, strict control of damaged starch, and perfect structural integrity during cooking.

Physicochemical and Chromatic Parameters and Granulometric Control.

Under the regulatory framework of Royal Decree 667/2016 and Harinas Polo’s internal control standards, this technical batch is distinguished by a precision-calibrated particle size distribution and optimal analytical purity:

Particle Size Distribution (Precision Grading): Fine Semolina is characterized by having virtually its entire mass concentrated within an intermediate range, ensuring predictable rheological behavior:

    • > 500 microns: < 1% (Guarantees the absence of unwanted coarse fractions).

    • > 355 microns: < 22 %

    • > 250 microns: 40 % ± 15 % (Main core of the semolina).

    • > 180 microns: 25 % ± 10 %

    • > 132 microns: 9 % ± 5 %

    • < 132 microns: < 20 % (Controlled thin base to avoid caking).

Visual Purity Control: Records minimal levels of peripheral visual impurities: black specks < 6/dm² and bran specks < 90/dm², demonstrating a purification process using state-of-the-art purifiers.

Moisture and Acidity: Controlled moisture of < 15%, combined with very low fat acidity of < 35.0 mg KOH / 100g, minimizing the risk of premature lipid degradation.

Chromatic Parameters (Yellowness Index): It exhibits an MCR 410 "b" index (yellowness) > 21.75. This high natural index indicates a high concentration of carotenoids native to durum wheat, imparting a brilliant, uniform golden color to the baked or extruded product without the need for artificial colorants.

Pure Protein: Greater than > 11.00% on a dry basis, key to forming a firm, water-resistant gluten network.

The slower water absorption is directly attributable to its calibrated particle size (with 40% of particles exceeding 250 microns) and the natural vitreous hardness of the durum wheat (Triticum durum) endosperm. Because the particles are coarser than fine flour dust, it takes longer for water to mechanically penetrate to the core of the semolina. Furthermore, the milling process minimizes the percentage of damaged starch.

From a techno-functional standpoint, this prevents the doughs from becoming sticky, pasty, or unstable during the initial mixing stages, allowing for precise viscosity control on automated extrusion and forming lines.

The "b" index measures the intensity of the yellow color spectrum via reflectance (MCR 410). A value > 21.75 analytically confirms a very high presence of natural pigments (primarily carotenoids and xanthophylls) in the durum wheat endosperm selected by Harinas Polo.

For the food industry (specialty breads, fresh pasta, batters, or cake batters), this parameter ensures that the final product will exhibit a brilliant, warm, and highly appetizing golden color after baking or cooking, strictly meeting clean label requirements by completely eliminating the need for artificial colorants or added beta-carotene.

Although fine semolina is derived from purified endosperm and is almost entirely devoid of germ, minute traces of native lipids can be altered by environmental factors. Maintaining a fatty acid acidity of < 35.0 mg KOH/100g ensures that the product leaves the factory with absolute biological freshness and free from hydrolytic degradation processes.

If multi-layer paper bags are stored in direct contact with the ground, they absorb residual moisture through thermal capillarity. This increase in humidity would activate the remaining lipase enzymes, breaking the lipids into free fatty acids, which would cause an increase in acidity, perceptual rancidity and the alteration of the delicate aroma and flavor typical of the cereal. Floor insulation is essential to safeguard its 3-month technical useful life.
